Been awhile since I got the wok hot - Sauteed Cashew Chicken

Since getting the mini my wok has been neglected so I had to fix that tonight.
The cast of characters are chicken with a little cornstarch, salt & pepper, green onions,garlic,rice vinegar,red pepper flakes and a sauce made from hoisin sauce,soy,sesame oil and water.

Before the egg got really hot I roasted some cashews

Now it's time for some wokkin. Chicken is almost done so in goes the whites of the green onions & some garlic

Just a quick pic of how hot the fire was

Next goes the sauce followed by the cashews and the greens of the onions

And plated up with rice.

That looks great. I've always done the aromatics first and then added cooked protein. Looks like adding raw aromatics after cooking the chicken to almost finished and then adding the aromatics worked just fine, and much less work. Bravo.

@DMW - I generally will do proteins first and remove then do the aromatics till close to done then proteins back in then sauce if there is any. This recipe called for cooking 1/2 the chicken(made sense because it was 1 1/2lbs). Then the second half of the chicken with the onion and garlic and when close to done the rest of the chicken goes back in. @Mattman3969, what ratio did you use for the sauce ingredients?Richmond and Mathews County, VA. Large BGE, Weber gas, little Weber charcoal. Vintage ManGrates. Little reddish portable kamado that shall remain nameless here. Very Extremely Stable Genius.
