I made some stuffing from Italian sausage, onions zucchini and calabasas (sp?) squash, lentils, panko and handfuls of seasonings.
I used this to stuff the hollowed out squashes and some mushrooms, then topped with 50/50 panko and shredded Romano. 350 indirect for a while.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Yeah, healthier. The taste is good, not great and texture is off but it worked well in this. I rubbed the squash boats with olive oil before stuffing to ensure enough moisture since the sausage is kind of dry.northGAcock said:
