Shrooms for dinner

Three kinds of stuffed mushrooms for dinner tonight - clean out the fridge kind of cook.
First, chile carmelized onions, pepper jack, shredded beef rib and topped with a little green hot sauce and a candied jalapeño slice.
Second, pimento cheese topped with shredded beef rib.
Third, shredded mozzarella, pesto, julienned sun-dried tomato, prosciutto and some shaved Romano. Next time I'll save the Romano until I take them off or grate it.
