Chicken Sate with Coconut Quinoa

Sliced up 2 chicken breast and marinated in soy,sesame oil,mirin,rice vinegar,garlic,brown sugar and red pepper flakes On to the mini at 550

On the cooktop I quick roasted some quinoa in coconut oil and then used coconut milk and a touch of water as the liquid.
And plated with some spicy peanut sauce for dipping the chicken.

I have some old plastic plates that I love to eat off of. You'll never see me post a picture of food on it, but I love them. My wife calls them my "special plates".------------------------------
