Bacon wrapped, blue cheese stuffed filets

Feeling nostalgic, for dinner tonight I pulled out one of the first dishes I learned from my days in the restaurant business. Been at least 15 years since I have made these, no idea why as they are so darn good.

Used filets from Sams, blue cheese from Kentucky, and Burgers bacon from near my wife's home in Missouri. If you have never bought a ham or bacon from Burgers I highly recommend it; they are a multi-generational family owned business that does it the right way.

Cut a pocket in the side of the filet, stuffed it with cheese, and wrapped it with bacon using toothpicks to secure.

Grilled direct at 400ish dome temp.

Served with loaded baked potatoes, grilled onions, and a simple salad.
