No time this weekend to roast peppers, so I opted for a nearly 3 lb tub of fresh roasted at HEB, the skin just brushed right off.

Smoked two large butts yesterday to pull for dinner and to portion, pack and freeze for son that we're moving into his college apt tomorrow.

This morning I made up kind of a pulled pork - Hatch migas with some Hatch tomatillo salsa and some hot red Hatch salsa.
Crisp up the pork, add the diced Hatch chiles, some Hatch tomatillo salsa, some broken up blue and yellow tortilla chips, add some eggs and some shredded cheese and finish with a little more salsa. Great start to the day, I may have to 'forget' some of this pork and leave it behind in my freezer.
