I was a non believer until I got into sous vide carrots.  Throw in the pork belly and this was one of the easiest and best meals I've cooked.

I've never questioned anyone's methods for prepping food. I could care less if you make it in the microwave, if it looks and tastes good I'm all over it.
I think you mean "could not" care less. To be able to care less means that you do care.
Yes you are correct. Well played.  =)

Bottom one got to be at Wally World!! Get the best dressed women there .What an absolute distraction when shopping there .Excellent appetite suppressant. They should have barf bags at the door when you come in next to the sanitize wipes .Maybe an eye wash wouldn't be a bad idea either .

I'm pretty sure @Fred19Flintstone 's yoga pants post is a violation of the man code.  I'm also pretty sure that you guys who are quoting it are also in violation of rule 6, article 5: if another dude posts fat yoga pictures on the internet, do not, under any circumstances, QUOTE HIM!

We do a lot of Yoga here in the South.....only we call it "stretching".

I used to laugh at Yoga until my wife got me doing P90X and Yoga day came around.  10 minutes into it I was in tears and she was laughing hysterically.

I love cooking and I grew up watching "Mr Wizards World" as well as Alton Brown so sous vide is right up my alley.  I haven't purchased one yet but I don't think it's too far off in the future for my household.

By the way, one of the best meals I've had recently consisted of spares I started with the SV, cooled, and then smoked for an hour on the Egg.

@JohnInCarolina - Dude, that sounds awesome! Do you have the details of that cook posted somewhere in a thread i missed? If anyone knows where this is please let me know. SV is a just another (VERY COOL) method to make some awesome food; I'm way on board!

It's surprising I even opened this thread. I see Sux Vide in the title and don't even open the thread. I'm here for BBQ, not boiled plastic bags.

While the Luddites are drying chewy lumps of meat devoid of tenderness and moisture - solely in their burned wood fire-ovens, enlightened man, one who has discovered higher brain function, electricity, PID controllers and recognizes the power of science and understands food at the molecular level, uses their whole arsenal, like the highly technological US military against a gang with dull knives, to cook delicious food by bringing out all that food has to offer.

So is the story of those that have seen the light, and those that live in darkness.  Your darkness is your prison, and the best preparation and cooking of proteins is the dim light of freedom on the horizon of great chefs.  Unobtainable, because that prison is your unyielding lack of capacity for improvement.

Blow Ye, the trumpet of ZION, to those that scoff at the ability GOD gave to connective tissue in order to break down into succulent GELATIN.  To cook tough parts of GODS creatures into dry pulled putrid over-smoked masses that need vinegar sauce to impart palatability is a SIN and THOU WILL GO TO HECK!!!

As if....as if MAGIC is not real.  One lives as a slug sliming the ground, as a bottom feeder, eating the refuge of dying, rotting detritus if one does not worship and embrace the methods of cooking that MAGICALLY WORK.  You cannot "see" germs, can you!?  They will make you sick, my fiends, such is the magic of sous vide.  It is truly magic.

The path of the righteous man is beset on all sides by the inequities of the selfish and the tyranny of evil men. Blessed is he, who in the name of charity and good will, shepherds the weak through the valley of darkness, for he is truly his brother's keeper and the finder of lost children. And I will strike down upon thee with great vengeance and furious anger those who would attempt to poison and destroy my brothers. And you will know my name is the Lord when I lay my vengeance upon thee.

Do not eat the meat raw or boiled in water, but roast it over a fire—with the head, legs and internal organs.

Now the Spirit expressly says that in later times some will depart from the faith by devoting themselves to deceitful spirits and teachings of demons, through the insincerity of liars whose consciences are seared, who forbid sous vide and require abstinence from foods that God created to be received with thanksgiving by those who believe and know the truth. For everything created by God is good, and nothing is to be rejected if it is received with thanksgiving, for it is made holy by the word of God and prayer.

I haven't actually.  I've only done it once, and didn't have any time to take more than that one pic since I was cooking for a bunch of people.

As it happens, I'm going to do them again this weekend, but on my Large instead of the MiniMax.  I'll take pics and see if I can't get a thread up on the whole process after the weekend.

But it's... EASY.  Almost too easy.  I've had help from @nola and @travis.  I think I've probably cooked ribs dozens of times on my Egg, and never really felt like I had them mastered.  Having done them this way only once, I'm not sure I'll ever go back.

I am a fan of SV, and I agree Carrots SV are soooo good.  Grab some from a Farmers Market (with greens still connected) instead of baby carrots . . taste is much better.
