Sear then indirect. Otherwise it will be hard to nail the internal temp you want while you're trying to get a good sear all around.
If you have time, check out the APL recipe for this cut."I've made a note never to piss you two off." - Stike -
I would just sear it @ 500 and take it off. It will be done. That looks awsome!!!!!

Thx DM. What temp did you sear at and did you go indirect at 350*?PROUD MEMBER OF THE WHO DAT NATION!

I seared on the stove top in a cast iron skillet then on the egg indirect 350 until 125.
This is was due to time constraints.
Came out beautifully. Medium rare from stem to stern.
This is was a practice run as SWMBO is having 12 coworkers over in two weeks and I've been told to rock the house with food.Philly - Kansas City - Houston - Cincinnati - Dallas - Houston - Memphis - Austin - Chicago - Austin

I usually just take it 133 then pull. To me I would take to 115 indirect then pull and crank it up to over 500 and sear to 130-133, pull and let rest. Looks like you nailed it. It hard to bring the egg down when it is 500 or more. If you have two eggs then it is easy to do.XL, WSM, Coleman Road Trip Gas GrillKansas City, Mo.
