New and improved Banana-Zucchini Bread

The fix-ins accept the bananas and zucchini.

All mixed and in the bread pans.



On the BGE for 50 minutes @ 350*

Looks great to me. 

The next morning.





French Toast and was it delicious!

Recipe:
Ingredients
4 eggs
2 cups sugar
1 cup vegetable oil
2 medium ripe bananas, mashed (about 1 cup)
3 cups all-purpose flour
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1-1/2 teaspoons ground cinnamon
1 teaspoon salt
1-1/2 cups shredded unpeeled zucchini
1 cup chopped walnuts 

Directions
1. In a bowl, beat eggs. Blend in sugar and oil. Add bananas and mix well. Combine the flour, baking powder, baking soda, cinnamon and salt; stir into egg mixture. Stir in zucchini and walnuts just until combined.
2. Pour into two greased 9-in. x 5-in. loaf pans. Bake at 350° for 50 minutes or until a toothpick comes out clean. Cool for 10 minutes. Remove from pans to wire racks to cool completely. Yield: 2 loaves.

    @Ross in Ventura, that looks delicious.  Curiosity is going to make me try this recipe.    The idea of "zucchini bread" has always seemed odd...

    A while back I was in the grocery store and noticed a guy behind me in the checkout line, dressed in a suit.  Looked like this might have been his first trip to a grocery store in a year ;-).   He held 4 big zucchini and nothing else. 

    I just couldn't let this situation go without some good-natured comments :-)...

    Me:   "What exactly are you going to do with those zucchini?"

    Him:  "My wife promised if I brought some home from the store, she'd make me zucchini bread." 

    Me:   "Don't you think you should get her flowers, since she's making you zucchini bread?"

    [ Don't recall his exactly response.  He was squirming though... :-), which eventually led to...]

    Him:  "Do you always interrogate strange men in the grocery store line about their purchases?"

    Me:  "Only when it involves 4 zucchini." 

    Him:  "Touché."

    Ross, yet again another great cook, and thanks for sharing the recipe. We will definitely make this and I will definitely be adding chocolate chips to the recipe :)
