Sunday Short Ribs and Shrooms

I've been seeing a lot of beef ribs on here lately so that is what was on the agenda today. Started out with some local grass fed shorties rubbed with Holy Cow. 


Oak smoked at 200F for 2 hours. Put in a covered dish with a mixture of Yeungling and broth. Raised the temp to 375 for a little over an hour and a half.  Here's the before:


And the after: 

 Another 20 mins of indirect 


Stuffed mushrooms with bacon, cream cheese, arugula and italian bread crumbs. Finished with a white wine cream sauce and chives.

    Excellent cook.  Those ribs look fantastic!

    I don't think you can cook short ribs much better than that!

    Yep that looks fantastic. Nicely done!! Or I should say WOOOOOOOOOO!

    All kidding aside, one of my personal favorites. We experiment will all different kinds of stuffings for mushrooms. Those look great brother Double.
