Brisket time on Sunday

Going to cook a brisket on Sunday - It's been almost 2 years since the last one.  Getting a full packer.

If I remember correctly cooking at ~250 its just under 1hr per pound.  I know to cook to temp and "butta" tenderness but wanted a rough idea on when to start the Egg and leaving time for FTC.

1 hr per lb sound about right?

Pork butts are usually 1.5 hours per lb for me.

    Gonna be a great cook.  My experience is I plan (key word) for around an hour/lb when running around 270*F or so on the dome.  That said, the last two Costco primes I have cooked at that temp have run around 0.7 hrs/lb.  Big difference-but saved by FTC.  And you can bet that as soon as I plan on the 0.7hrs/lb cook rate I will get hosed in the other direction...friggin beef

    Punch-line aim for early so you are not stressing to punch it home.  FWIW-

    Be prepared to power through at a higher temp or with a foil wrap if running behind schedule - or FTC if running ahead of schedule. The brisket will have it's own timetable.  My records are 7 hours for a 13 pound packer at a temp of 240, and last weekend when it took 17 hours for a 10 pounder that stalled for 7.5 hours while I kept them temp above 275 the entire time.  They both turned out great in the end, but were very frustrating during the cook.

    If you're not going to hit a 3 digit temperature, don't talk to me about hot. 

    But keep us posted on the cook and get a money shot.

    11.9 lb brisket before I trimmed off some fat.  11hours and counting.  189 now and still a little tough.   Letting it ride.  Will have more adult beverages before hand.

    Came out good.  Not my best but good.  All enjoyed it and some leftover to freeze for chili in the fall.

    Took 12 hours on the nose.
