Today we are feeding 25 here at the shop. We have 2 Thompson River wagyu briskets (25lbs total) on the XL and a couple of nice bone in pork butts going on the Large Egg. Sun is coming up and it smells good around here. We will also be doing a large pot of BBQ beans (in the dutch oven) with slaw and garlic bread. Pics to follow.

Smitty Class...Briskys n Butts!
I spent most of my money on good bourbon, and bad women...the rest, I just wasted!! -
Man those briskets look really good. I don't think I have seen a brisket shaped like that. They are so "plump" looking.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

We put a stainless bowl under them to help keep out of the heat zones, once we foil we can take the bowls out. Sorta makes 'em look like beef turkeys!SmokeyPitt said:Man those briskets look really good. I don't think I have seen a brisket shaped like that. They are so "plump" looking.-SMITTY

Ive seen that technique talked about before Smitty... but I think they were using small aluminum pans flipped upside down. Seems like your idea might be better.SMITTYtheSMOKER said:
