My wife and I celebrated our 10 year wedding anniversary Thursday with a night out but I still needed to cook something so tonight we celebrated again in a major way. Picked up some 2" NY strips (about 24oz apiece) and two lobster tails from Kroger. Just got a CI grate for my MM so I was dying to break it on proper.
Brought the strips to room temp while I fired up the Larg. Brought the Large to 225 and threw on a couple chunks of cherry. While the steaks where approaching the target temp I fired up the MM and got it up to about 650. Once the strips reached 115 I pulled them and threw them on the sizzling hot MM (with new and improved grate in place). About 1.2--2 min. Per side (god I love my MM!). When they read 135 I pulled and topped with some garlic and herb butter before wrapping in foil to rest.
While the steaks were resting I removed the plate setter from the large and threw on some squash and fresh corn. Meanwhile on the MM, I brought the temp down to 500 and added two lobster tails. Cooked 5 min. Meat down, flipped, added garlic and herb butter and cooked 4 min.
The strips were amazing and the tails (first time) were excellent. All and all great meal to mark 10 years with an amazing woman.

Looks great. How long did you do the tails?

500 degrees. 9 minutes total. 5 meat side, then 4 shell side.

Brother, the food looks outstanding. Steak and lobster are two of my very favorites. For a job well done:
Location- Just "this side" of Biloxi, Ms.
Status- Standing by.
The greatest barrier against all wisdom, the stronghold against knowledge itself, is the single thought, in ones mind, that they already have it all figured out.
