Best Way for Steak Direct Cook

Waiting for my CGS order to arrive with my indirect setup but want to make a steak tonight to pop my egg's cherry. Have this beautiful 2" thick porterhouse that just arrived that I want to make. Suggestions for the best direct cook method? Don't mind burning the gasket as @RRP already shipped me a Rutland. Med rare temp if that affects your answer. Thanks!

You could T. rex or red neck hot tub depending on time.
Trex is sear really hot and rest while egg cools to around 400. Hot tub: seal up and put in sink or cooler of hot water for about an hour, maybe longer for that thick, then sear on egg. -

Get your egg to the point it feels as if you're looking into the face of hell and throw it on for 1 1/2 -2 minutes per sideXL times 2

I'd reverse sear that bad boy. Indirect at 275....pull below your target temp. Rest for a good 20 mins to let temp in meat calm a bit. With Egg in direct mode and hot, sear the crap out of it. @HofstraJet, I can appreciate your reluctance with that gorgeous looking t-bone and can't say I'd not feel like you too. Get some good supermarket steaks and try caveman on those to get comfortable. Then, you'll throw some prime steak onto the coals

I would wait until it burns .. the Rutland will take you a day to get it installed right (waiting time for the permatex dry & set properly), so use your vrgin gasket until your steak is cooked.HofstraJet said:On another note, ordered a Rutland.
