OK so the wife goes out of town tomorrow so Im egging stuff she wont eat. Large fresh scallops and brussel sprouts. I never egged either, what would you do? Seasoning and cook advice please.

    No help here, but I'll bump you to the top. Maybe @SGH will be along soon. I think scallops are one of his favorites.

    Sprouts in cast with bacon and dried cherries and /or cranberries and some balsamic. I cut in half, par boil for about a minute and then into the egg in cold cast iron until they get some char and the fruit is getting sticky. We live hem that way.

    I use ancho and red chile pepper rub. I toast the chiles and then grind. As far as the cooking goes I'll get the egg around 350-400 and let the skillet heat up for about 30 mins or so. Add about 2tbls of butter and when it melts the scallops go in. Flip when the don't stick anymore and have the desired crust. I pull when both sides crust is good and it is close to 135-140.  

    Salt and pepper works good as a rub too. 

    As for the sprouts I like to do them in a veggie basket if I'm going for the grilled taste or in a foil lined pan if I want the bakedish taste.  Either way I will use a little EVOO,Balsamic and minced garlic on the sprouts before cooking.

    Definitely CI on the scallops with a lite S&P. The sprouts with Vidalia onions (in season everywhere) minced, lite balsamic reduction and cooked till nice and tender. 
    Edit: sprouts in CI deep pan or foil pocket. Or a perforated foil pan.

    Balsamic vinegar and lite honey in a saucepan on medium high heat to a boil. Reduce to a simmer until it's reduced by 1/2. Drizzle over the sprouts to finish.

    I can't help it, every once in a while my lazy side shows up.  I have intentions of reducing my own and even have a bottle of BV to do it with one of these days.  Lol

    Really just depends on which is more important to you at any given time. I think that bottle cost me under $5.

    I can't eat scallops but I cook them for the wifey. She says the scallops I plank for her with a fresh cilantro lime mix are the best.

    More detail. I have never even thought of planking them. I always do like so many others and sear in bacon fat over cast iron. Do tell.

    I used a cilantro lime marinade yesterday and they were fantastic on the salt block.  3T lime juice, 1T honey, 2T cilantro, and 1t fresh ginger.  It also called for a 1T hot sauce that I didn't use because I didn't have any.  It could have used it.  Tried to post but it went to drafts and I can't get to it on the mobile. Need to get to a computer to post it.

    Pretty good for first try. Did some pigshots first so had some bacon and sausage out that worked out good. Cut the spouts in half and drizzled EVOO on and then cracked pepper and sea salt. Had the CI griddle on while cooking the pigshots getting hot indirect over a load of RW about 425.  Drank beer and cooked the pig shots, it was rough but I got through it. Then put some bacon on the griddle and the sprouts in a basket. When the bacon started to crisp I pulled it off the griddle and put it on the sprouts in the basket. Scallops went on the griddle with more cracked pepper and sea salt. So theyre searing in bacon fat....
