please post your cook - I've never had bear meat - this sounds interesting.Phoenix

Never had it either but ended up being asked to cook it & have not found anyone who has ever cooked it !

Bear is pretty good if cooked properly. Can be a little greasy but not overwhelming. Additionally the quality of food the bear eats dictates the taste of the meat. Berries and foliage vs. garbage.Large BGE - McDonald, PA

I have never cooked bear, but I have seen several post/questions asked about cooking bear here on the forum and most people say to make a soup/stew with it. Just google bear recipe big green egg and you should get your answer.Large and Small BGECentral, IL

Its great in sausage but so is everything, also it is more like pork so if you can make a ham out of it, that is really good too. Ive had steaks and they were dry and pretty terrible to be honest. This was a Canadian black bear that wasn't near a dump, lol

I've always heard it's important to eat locally sourced bear whenever possible, like honey.

I have had bear floored with salt & pepper and cooked in a skillet with some oil back about 10 years ago that was pretty good. It wasn't gamy a was tender. It was a coworker who cooked it and had shot it up in Canada on a hunt. I would like to try and cook some.XL, WSM, Coleman Road Trip Gas GrillKansas City, Mo.

OT -- PSA: Probably not a concern for most of you, but just don't eat brown bear meat. Known to be carriers of the dreaded trichinosis. Even frozen meat can be a problem.
Edit: Apparently a concern for Black bear as well, so make sure the meat is cooked well, but I've heard more stories surrounding brown bear up here.

@mahenryak Extremely few cases of trichinosis from commercially raised pork as they don't eat off the ground. About half the reported cases now are from wild game esp bear. I think cougar is the other carrier. Also pork raised free-range on small farms. No rare bear meat for me please!Chicago, IL - Large and Small BGE - Weber Gasser and Kettle
