Monster Chops seared on CI

I stopped by the butcher shop to pickup my normal meat order and decided to buy a couple of monster chops for dinner. I rubbed them down with smoked paprika, garlic powder, parsley, brown sugar, S&P, and olive oil paste while the small egg came up to temperature. I cooked them indirect until 125 degrees IT.

Removed the chops and plate setter and added a preheated CI griddle drizzled with grape oil and seared the chops on both sides.
