Spare ribs with my new Sous chef

Been a busy week for us so decided to do some spare ribs today. Rubbed down with Central BBQ dry rub. Cut the flap off and marinated it in allegro. I also hired a new sous chef Wednesday. Going to have to get a mini max for her soon.

Thanks everyone. The ribs went for almost 6 hours. Used cherry chunks for smoke. these bad boys were very meaty. Hopefully they don't put me into a food coma bc I'm on baby duty as the wife naps.

Thanks Walt2015 . Lets just say when I was down there last August I cleaned out the downtown location on rubs and sauces. I bought some for myself and two of my brothers. I think my tab for just those was about $300.Large and Small BGECentral, IL
