Grilled Chipotle Chicken

Iv'e been reviewing Grilling and Smoking the recipes in this wonderful cookbook Southern Living ULTIMATE book of BBQ The Complete Year-Round guide to Grilling and Smoking By Pit-master Christopher Prieto the Publishers Oxmoor House sent me this so I could post my impressions of there Grilling and Smoking recipes





Jackie's zucchini plant ready to harvest. Here are seven for tonight.

The rub.

Let the chicken and rub marinate while the BGE got up to 400*




These were on the Grill Grates in the BGE for only six minutes, three on each side.


Look at those char marks! The seasoning worked wonderfully it was just spicy enough the freshly picked zucchini that Jackie fixed was wonderful as well. I keep finding recipes that I want to fix, the problem is witch one!

    Those look great! We cook boneless chicken thighs all the time. Highly underated imo. Need to try this recipe too.

    Sounds and looks awesome. Nice idea to flatten it out, making it a quick option also.

    As always great pictures and great looking cook!! Sometimes when you hangout here its easy to forget some of the best meals are a piece of meat with simple seasoning cooked properly. 

    Nicely done Ross.
    I raise my kids, cook and golf.  When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.
    Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

    Ross, yours looked SOOO much better than mine did! :lol: Mine weren't as good as the jerk I've been doing lately, but still pretty good. No pics though - but it DID happen. ;)

    And I discovered something. I can fit SIX thighs on my Mini! I had a partial package of thighs in the fridge and didn't realize they were that many days past their sell by date. They smelled fine so, rather than freeze some, or cook them on the large, I decided to throw them all on the little fella. NO WAY I could have fit seven! Unless I stood them on edge. :)

    Anyway, thanks for the recipe!
