After hearing all the arguments and reading an article against wrapping your ribs with some type a liquid I decided to give mopping a shot. Grilled these at 250 for two hours then started mopping every half hour until they were done. They came out fantastic. The flavor was incredible, they were really moist, and pulled from the bone pretty well also. No more foil for me. Sorry no plated pics. I'm lucky I got the one when I pulled them off.

That is the problem with 2/2/1 and all these other techniques that just weren't designed for the egg. Start with basics and just cook stuff simple and normal, then complicate stuff if you're not happy with the results.
Just a hack that makes some $hitty BBQ.... -
