Huli Huli shrimp and grilled pineapple

Tonight I marinated some large fresh gulf shrimp in Hawaiian Huli Huli sauce for a few hours. In parallel, I marinated some fresh pineapple spears in coconut milk.
I dusted the pineapple with a mixture of tubinado sugar, ground cloves, cinnamon and ginger. Grilled at 400 direct to caramelize and then moved them to the side to continue to cook for a while.
I opened the vents and grilled the shrimp at 600, flipping quickly and brushing with a mixture of Huli Huli, honey, sriracha and red chili flake.
Served with some steamed brown rice and a watermelon/feta/arugula salad, no pics of the salad though.

Looks like a winner to me. Grilled gulf shrimp are one of my favorites.

Those shrimp look amazing!!! I have trouble getting a char on shrimp without overcooking them, and those look charred but not overcooked! I'm not sure I've taken them up as high as 600 -- maybe that's the secret. Whatever it was, those look GREAT!
