Don't see how any sort of nest would have stopped that. Looks more like operator malfunction to me. Correct me if I'm wrong the nest goes on the bottom?

Hopefully people will learn from your near mishap.
Mine is in a nest on gravel. I'm holding out for a stainless table for this and other reasons. My biggest worry is that flying sparks will light my field on fire.
Yes, air is a good thing. It lets our fires breathe ferocious hot flames and cools us when we sweat. It doesn't take much air to keep things cool. Take for example the spring handle below. Just a little air space between the coils allows me to open my coal stove bare handed without burning the $#!+ out of it. Just a little air is all it takes.

I occasionally clean burn, but only at 650, i don't think past that is necessary. I rarely do it, only when i have done a butt or brisket and the day has inevitably dripped over.

Raising the egg in the table also increased your air gap between table top and base. A good thing.
½” or so of ash left in the bottom is also a good thing, the ash will actually reduce the heat transfer from embers burning below the fire grate to the bottom of the egg. Some kamados come with a ceramic insert in the bottom for exactly this reason.
