3-2-1 Pork Back Ribs

Dialed in at 230 dome indirect with 4 chunks of cherry, wrapped at 3 hours and back on for 2 more hours. I will finish these tomorrow at 250/275 out of the foil.

Our SAMS club has been selling Baby Back Ribs in a 2 pack for the last year or so and I typically do both racks at the same time however we only eat 1 rack and save the 2nd for a day or 2 later and we both feel the second rack is always better, so this time I decided to do it on purpose and see how it works out.

Here is the end result, left out of the refrigerator at room temp for 3 hours then put on a 350 indirect dome one slab sauced on the left and one without on the right for 50/60 minutes,
