Okay guys... what are you cooking for Mother's Day?

I'm going to be smoking some baby backs. I usually smoke St. Louis cut spares but I wanted to try something different.

I am smoking a SRF Korobuta ham for my baby's mama and my baby's mama's mama tomorrow.  On Sunday doing brunch with my mama and will probably have some leftover ham and a breakfast casserole.  The wife has requested a fajita rice bowl for Sunday.  Basically grilled fajita chicken and veggies over rice and drowned in cheese dip.

Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

Change of plans. Momma has requested St. Louis cut spares so that's what I'll cook. Going to use some seasoned black cherry and hickory for the smoke.

I'm smoking a turkey tomorrow. A lot of turkey lovers on the in-law side. On Sunday some spare ribs and burgers. Haven't decided on the sides yet! Sister in law is bringing the beans. Maybe some corn on the cob and was going to try pig shots for the first time.

Pulled pork for Saturday M-I-L request,  grillEd corn and potatoes.  Sunday will start with eggs and bacon my wife's favorite then after church to lunch and for dinner steak and lobster with red skin potatoes and grilled veggies. My daughter wants to make ice cream so probably grill some peaches and pineapple to go with that.

T-Bones, salmon and twice bakeds Saturday for my Mom and Dad, my brother and his wife, and my family.  Sunday I'm on call/working so I'll probably make that one up as I go.  Ribs if I have time to get them on and the stoker set up.  Otherwise probably brats.

    I cooks fast!
    I prefer it rare.
If you can get a intact rack - salt, pepper, a bit of thyme and rosemary. Season and wrap tight back in the fridge for about 2 hours before putting on egg.  Cook indirect at 225 till 15 degrees below desired doneness.  Remove, and rest on cooling rack.  Try to estimate lump so you have about 1/4 - 1/3 of a load of lump in the egg when done.  I have a large like you, but also a second small grate. I put the small grate right on the coals. Then crank her up to about 350-375. Once there, I close bottom vent to just a hair, and sear on each side - about 1 min a side with the dome up. Have long tongs ready - lots of fat, and you will have a flareup.  Slice and serve immediately.

I skip the mint jelly. Just salt for me, please.

I use the same technique for a leg (bone in or boneless) - the only difference is I keep the large grate in the egg, and sear it there.

Going to an over priced brunch buffet.  MIL, wife, and my mm om are all going and I get stuck with the bill!  Would be much better if I cooked on the egg!  See a plan for father's day in the making!

@LKNEgg the place that my wife and mom wanted to go to would be 25 dollars a person for brunch on mothers day and I'm on call/working so I said no.  Wasn't going to pay for a meal that I might not even get to be at.  Saturday night steak and salmon will be just fine...
