pastrami hash

egged the pastrami last week, then tonight made breakfast for dinner (not on the egg)
potatoes, onions, mushrooms, chunked pastrami and some diced hatch chiles sautéed until crispy and happy, then a couple of gently fried eggs and sriracha drizzle.

Thank you for your post! I have a frozen pastrami package that I made & saved in my freezer that I'm sure my wife doesn't remember nor would really care to EVER have again. BUT I loved it and your suggestion sounds like a terrific lunch for me in the future!!!Re-gasketing the USA one yard at a time

Thanks for the nice responses, I almost didn't post since it wasn't on the egg, but figured the pastrami half-qualified it. FWIW, I liked the pastrami better than using straight corned beef, it had a subtle smokey flavor that worked. Wife liked it, she isn't a fan of smoke on everything.
