Subzero Butt

On Friday my van arrived. Yep, my boss bought me a new van. Derek, you friggen rock! :rock_on:  My old van has 224K and will be going to our new hire. I woke up early and took her in to get tinted. 


Ran a few errands and bought some materials for a few jobs I've got lined up for next week. And somewhere in it all I decided I was gonna do a L&S butt today too. Only problem is they are frozen solid. No problem MacGyver is in the house!


Stoker after 40 minutes of smoking. Running with RW and a large chunk of Pecan & Black Cherry.  Pit dialed in to 235℉.   The butt was at -6℉ when it first went on. 

Picked up some Intuition Brew on my way home. Great brewery right here in sunny downtown Jax. 


Since the butt won't be ready till tomorrow early afternoon I decided to make a very simple meal on the MM. 
Brats and Dogs. 


Plated with some mayo and jalapeno mustard blend (real good stuff).


I'll continue this thread tomorrow with updates on the L&S. OBTW Butt IT after close to 7 hrs is 46℉. :lol:

    Lol, did you actually drill a hole in the frozen butt with a bolt?

    That's awesome! When I cook a frozen butt I just don't bother with a food probe until the morning when it is thawed enough to put the probe in.

    @DMW Yep! SS bolt/coarse thread screw. Beat the ever loving snot out of it with the backside of my hatchet and then with a 1/2" drive and 9/16" socket I worked it into the probe depth. I wanted to see if the Stoker would show the IT as negative. It did. I have my deep freezer hold temp at -6℉ and sure enough that's what it read.  I was was laughing maniacally as I did this. Even I thought I was off my rocker. :lol:

    @stemc33 Oh yeah you didn't know MacGyver was Pit Master before anybody thought it was cool. But, he used a magnifying glass to light his pit. Because... well you know he's freaking MacGyver and that's how he rolls.

    @NPHuskerFL I notice on the pic where you are cooking the brats and dogs you have the lid open and you have the bottom vent shut.. Tell me more about that please.

    Thanks Everyone. No updates yet. 

    @johnmitchell no vice. I gripped it with one hand and drove the bolt/screw enough to get it started and then the rest of the way with the socket drive. 
    And closed bottom vent just long enough for flames to subside (pit was close to 600℉ in that shot) and finished the brats with a quick flame tickle. 
    @Chowman Never smoked a frozen butt. One large fist sized piece of Pecan and one fist sized Black Cherry for smoke. No bump in temp so my anticipation is a good smoke flavor profile with an even bark. We shall see.

    Guilty secret - I LOVE hotdogs, but only when they are grilled and have some char on them. And I use mayo, ketchup, mustard, relish, and sautéed onions. Toasted bun, too. Okay, now I'm hungry. :)

    I remember the days of receiving the new work vans. Makes you feel appreciated. Now I'm the one that buys them and has to give them and pay for them.

    @Roadpuke0 I was and still am in awe over the Van. I take care of my and company vehicles. I take pride in it. In fact I'm outside as I type organizing my tools and files. I've thanked my Boss over and over. But, ultimately the biggest thanks I can give is productivity, profit, customer retention and just being an excellent tech. 
    @stemc33 Loaded up to the bottom of the PS and after right around 22 almost 23 hrs I have a little over 1/2 left.

    What did you think of the FatBoy's sauce? I've used their rubs plenty of times but haven't used the sauces.
    I raise my kids, cook and golf.  When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.

    Kudos on implanting the food probe.  The probe isn't THAT thick tho ..... why the apparently large diam bolt?..  Unbelievable on the socket wrench.  Pic's of that with you in maniacal Dr Frankenstein garb would be priceless. Goggles a must. Lol
