So it is ribs for dinner! She never liked ribs before but i got some at a bbq joint last week and she helped me eat them and decided we coyld do better so here is my first shot in on the egg

how long did you cook them... I have decided the 3-1-1 doesn't give me the bark on the outside that I like. (3hr-1hr foiled-1hr no foil)

Just over 4 hours.....I love the bark. Cooked them just under 300 until they looked like they would break when I lifted them up. Sauced one and left the other dry
