Not really sure any egg is easily moved by one 70 year old unless you are in Sylvester Stallone shape. How many people will you be cooking for on your travels? I would guess a mini or mini max would suit your needs Unless you are cooking for many more then you and your wife.I raise my kids, cook and golf. When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

Taking your egg with you on the road sounds great. Lots of time to sit and supervise...
If it were me, I'd think in terms of a lockable box mounted to the back of the RV. Something that would open up and pivot out on an arm away from the RV and out to the passenger side. My goal would be to not ever have to lift the egg. If you have an idea, a decent welding shop could easily fabricate it for you.
Curious to hear from others if they think the ceramics would be ok on the road with constant movement.Phoenix -
I do not think something mounted to the hitch would work because I will be pulling my classic sailboat a lot of the time. How much does a mini weigh? Most of the time the cooks will be for the wife and I.

mini would be fine, make a wooden box for storage and flip the box over to use it as a stand. if you go bigger you will want to ask someone for help but most camping areas theres usually someone that will give you a hand

@h12mike we bring 2 minis with us in our class A. We just put them in the basement storage with our dutch ovens in there nests ans use other stuff to stabilize them. Never had 1 problem yet.
if I were to tale a guess the minis are under 40 lbs each. I can handle them by myself which is saying alot at i am only 140 lbs and use a cane to walk. If you are willing to part with some green, Challenger makes a cart and a hitch lift system for serious campers and tailgaters. It has a high heat gasket around the top to prevent movement and damage. Raises and lowers with a switched electric motor. Really high quality. If you have a bunch tied up in an RV, this might be just the ticket. It would be like having your home setup with you, or better.

Just went to a local Egg dealer and his price for a Mini is $550 and it includes the platesetter and stand plus extras. Is this reasonable???

Mini will be perfect for two.I just spent the last three months at Mom's house and cooked most of out meals (meat anyway) on my mini. Couple of times, my brother and SIL showed up.
