Brisket was great...then got tough

Hey all!
I did an Easter Brisket that turned out incredible...first great one ever...and it was perfect. Bark, Pull test, smoke, flavor...then when we went back for seconds, it was kind of tough. Pull test was not great either. Just looking for advice here because I love brisket, and want to master it the way I have pork butt and bbq beans.

Did you slice the whole thing and go back for seconds? If that's the case, everything I've read and listened to Franklin is that brisket dries out immediately when cut and that could account for it.

This really depends on a lot of factors.
How long is the timeframe from when you eat the first and went back to second? Is it sitting on the counter the whole time or in refrigerator? What grade of meat did you use? What IT temp did you smoke it until?Houston, TX - Buddy LBGE, Don SBGE, Tiny Mini & Shiny Momma Pitts n Spitts

It also very much depends on which part you were eating and how you sliced it. I'm guessing by the time you got in to seconds you were probably at the point (fat part). The grain changes in that part and if you don't rotate it 90 degrees to slice, you will be cutting with the grain. Eating brisket cut with the grain chewy, stringy and won't pass the pull test.
