ABTs»»» jalapenos cut into boats and cored, Philly cream cheese, fresh shelled and deveined shrimp marinated in Peruvian Gold Grilling Sauce and wrapped in thin sliced center cut bacon. Egged in the MM indirect at 275℉. Hit them with more sauce 2 more times during the cook until the bacon began to crisp up.
Then a few mini kabobs. Shelled and deveined shrimp marinated in Ala Moana Coconut & Mango Seafood Sauce. And draped some with bacon.

Thanks everybody! My only regret on this cook was NOT using a CI pan on the filets. They were good but, the sear on CI cannot be beat. The apps were delicious. Excellent cook Blake - that whole fish gets me jealous everytime.
quick thought on the feta or goat for abts, when I've tried either, the melt texture is odd and taste can overpower. I now mix these (or blue cheese) 50/50 with cream cheese for stuffing.THANK YOU FOR YOUR ATTENTION TO THIS MATTER -

I love the cheeks and can't wait until gag grouper season opens to also do some grouper throats on the Egg.
