Spatchcock chicken could easily be done the same day as delivery. Only takes an hour (+/- 15 minutes).

400 raised indirect 45minutes and done. Just make sure to let your egg settle in and the smoke to become clear blue and your set.XL BGE, KJ classic, Joe Jr, UDS x2

Nice! Looks good... That might be the winner... I've heard that you should do your first few cooks at low temp tho.. This true? @ryanttLarge BGE

No. The gasket is crap anyhow. Cook what you like an know well. Don't cook something you've never cooked before and expect it to be great just because it came off an egg. It won't be and you'll be discouraged.ryantt said:Yes should run your first few cooks low 350-400.Slumming it in Aiken, SC. -

Welcome and Congrats!
I did steaks my first cook. I'm still screwing up ribs from time to time but others can nail them every time; just follow a good script if you go that route."Dumplings are just noodles that have already eaten" - Jon Kung

Sounds like you want ribs and there is no reason why you shouldn't have ribs. Ribs can be cooked anywhere from 250 - 350 and not hurt a thing. Just know at 250 you will have 5-6 hrs and 350 your looking at about 1hr 40mins to pass the bend test. I would suggest getting to know your egg. When you get a chance load it up with lump and start out trying to maintain 250 for 1 1/2hrs then bump it 50° for a good period of time and continue up till your at 450-500°. Make mental notes of what your vent settings are. This will help you in the future.-----------------------------------------analyze adapt overcome2008 -Large BGE. 2013- Small BGE and 2015 - Mini. And don't forget to wait for clean smoke before you add whatever meat your cooking. Hold your hand over the daisy wheel for a few secs and then smell your hand (sounds kinda high schoolish) but if your hand smells bad wait a bit, if it smells good it is time for the meat.-----------------------------------------analyze adapt overcome2008 -Large BGE. 2013- Small BGE and 2015 - Mini. Always recommend spatchcock chicken and a pan of veggies and such. Quick, easy, and always delicious. Nothing beats kamado chicken IMO.

Welcome, lots of information from the experts around here! Cook some ribs low and slow and add in some hamburgers for an end of cook adventure. Can't mess those up! I've found the egg to be very forgiving! Biggest thing is to make a drink and enjoy the experience!Large BGE - 2014

The bitterness of poor quality remains long after the sweetness of low price is forgotten!

Just cook and enjoy. The learning curve is fairly short.McKinney, TX
