Ah, a Jimmy Hoffa disposal machine, old school to say the least. Grind some pork trimmings (and beef if you like) add some sage and other stuff and get busy.

I have an old press just like this one. As a kid in the midwest I remember these being used at annual hog killing during the winter months. Used to press the pork cracklings that were gathered out of the large kettles that rendered the lard to be saved. Great looking piece of vintage equipment. IMO

I had an old Enterprise stuffer. Beautiful piece of equipment. Weighed a ton. Leaked about a pound of sausage around the plate every time I used it, left about a pound of sausage in the bottom when it was done pressing. I loved/hated that thing. Got a nice, modern, stainless, two speed press with silicone seal, and all those issues went away. Sold the Enterprise at a garage sale. Miss the history and beauty of that old beast.
So I'm both envious of your purchase, and not envious at the same time!In dog beers, I've only had one.
