Through and through stuffed chicken breasts with a bacon yoga mat save

long day, long weekend, long week
decided to have some brown liquor as an app, that's usually not a good choice for me when I haven't figured out what I'm cooking yet.
stuffed a couple of boneless skinless chicken breasts with the slit in the top - making a pocket. I think it was @Henapple that steered me that direction a while ago. Anyway, I'd never done it before and apparently cut a little too deep. Stuffed the breasts with some smoked Gouda dip - kind of like pimento cheese, but with smoked Gouda - and stuffed a slice and a half of prosciutto on top to close it up. Seasoned with some Chupacabra rub and then discovered that I cut through and was probably going to lose all of my cheese. I decided a bacon wrap or weave was out of the question, so I juat made a mat of bacon to cook the chicken on, and put this in my basket. On at 350 raised direct. We'll see how it goes.

...and the finish. Turned out great, but plated pics suck. Pulled the chicken off the bacon and gave it a blast of grid-level heat to finish and let the bacon cook a bit more. Crumbled the bacon on a salad.
