I usually light my large with a Mapp torch in 3 spots for most cooks. Only one spot like others have said for a low n slow,

The XL has the best airflow of the eggs its size and smaller so its easy for it to get away from you and it has so much mass if it stays hot very long its hard to get it back down. Mine if I was shooting for 350 I willl usually let it get to about 400 then shut the vents down to my normal 350 settings and it will settle in fine.

The torch made my life a lot easier. A lot easier to get going quicker especially when reusing lump

What tpye torch are you using? I'm thinking of one of those hand held type that you use for soldering copper pipe.

Some use MAPP torches (yellow bottle) some use industrial sized weed burners like @Mickey and others (myself) use propane garden torches that look like canes. Luckyboy MAY want to see my post about 'ODD DEFECT?' My daily wheel as sent to me would NOT seal properly until I had done some minor surgery to help it seal properly.
I'm new to this And I'm already going to start depending on my BOTTOM vent as the 'throttle'.
Trying first LONG cook tonight in about an hour when I put on a Pork Shoulder the wife has rubbed and prepared.

I've witnessed the sparks. I'm going for a low cook tomorrow, I've got some short ribs rubbed down and waiting on me. I had a low temp fire in the egg today so hopefuly todays dry run results will help me tomorrow.

I use a weed burner from harbor freight that attaches to a gas grill propane tank. $30 for one with a built-in igniter. $20 for one without.Cooking on an XL and Medium in Bethesda, MD.

Among other things, I tried the starter cubes and paper towels soaked in cooking oil and alcohol. Have settled on two separate approaches:
I use a MAP torch if I want a smaller controlled fire for L&S. Weber chimney if I want a larger fire for direct cooks and searing. Both are fast and easy.

Sunday I was able to light my egg and hold 250* all day.I studied all the advice that I received from everyone.Thanks again.
I attempted to cook some beef short ribs and to be honest they weren't great but eatable.Does anyone know what the grill temp. Would be if the temp. Gauage is held at 250*.

For the first few hours 225 or so and climbing to equilibrium with the dome has been my experience on the large.

Thanks. I was going to read it with my infrared thermometer yesterday but the batteries were dead.using my hand I could tell that top of the egg on the outside was pretty equal in all way around. and that it was probably the same on the inside.
