Any one using burning hay to smoke?
Tjcoley
Posts: 3,551
Saw a few articles recently where burning hay is used to smoke cheese, fish, filet and other items. Anyone tried it? One technique is to fill the bottom of a DO with hay, place the cheese in the middle and heat til the hay starts smoking.

Hay, that reminds me of crazy smoke used for schwarzwälder schinken. Fir branches, sawdust, not the normal fare. To answer the question, I have not tried it on purpose. Accidentally, yes.

@Tjcoley did you see that on TV? I saw that tonight, some restaurant in California.
I've never tried this, but I remember maybe 9-12 months ago one of the eggheads in UK posted a traditional recipe for cooking lamb in hay. -
Saw it on a Bobby Flay besy 10 restaurants, but have seen a few other articles on line as well.__________________________________________It's not a science, it's an art. And it's flawed.- Camp Hill, PA

I have seen it done. And wet straw used in a pit smoke. Wet straw over corn on the cob. Just make sure the straw is clean. Poison ivy in straw and smoke not so good

Burning hay smells nasty to me. If it taste like it smells I don't want any part of it.Large BGE, Holland Gas Grill, Masterbuilt electric smoker, Oklahoma Joe, Flame Boss

It's cheap, it's plentiful, but I have too much apple smoking wood leftover to try it anytime soon.

BBQ is a celebration of culture in America. It is the closest thing we have to the wines and cheeses of Europe.
Drive a few hundred miles in any direction, and the experience changes dramatically.

Here you go. Apparently my memory is failing, it was just two months ago -

I feel like the only reason you'd do this would be to signal to the neighbors that the Apache Indians were about to invade."I've made a note never to piss you two off." - Stike
