sorry about that guys and gals, computer went on the fritz just as i was posting. i cooked indirect at 300 degrees until the internal temp was 100f and then seared her up on the flat cast iron.
a buddy gave me some new spice to try and it charred up and made a really tasty crust.
i also used a lump of pecan wood for some smoke flavor, thanks all for looking!Kamado Joe Big Joe, Classic & Junior -
