Reverse-sear Tri-tip --- now with pics lol

Hi all,
wanted to share my first-ever experience searing a large piece of meat on a flat cast-iron.  Results came out perfect and the char held so much flavor!

sorry about that guys and gals, computer went on the fritz just as i was posting.  i cooked indirect at 300 degrees until the internal temp was 100f and then seared her up on the flat cast iron.

a buddy gave me some new spice to try and it charred up and made a really tasty crust.

i also used a lump of pecan wood for some smoke flavor, thanks all for looking!

yes, you can get it in a lot of places.  pretty tasty.  they are actually, made by runninwild and the peach one is bomb

I love that cast iron.  that tri tip would have lasted about 20 seconds in my house.  you nailed it!
