Stuffed Pork Tenderloin with Apple Salsa & Root Veggies

I started out roasting potatoes,carrots,golden beets, garlic and brussel sprouts with a little Bodacious rub.

While the veggies were roasting I butterflied and trimmed the tenderloin. I stuffed the tenderloin with ham, bacon and white cheese. I wrapped the tenderloin scraps with bacon.

I grilled the tenderloin at 400 direct while the snacks were position close to the side for a more indirect cook.

I finished he'd chopping the ingredients for the apple salsa while the tenderloin was on the Mini.

Man that looks good. Where'd you get golden beets? And What all's in the salsa?

The golden beets came from Sprouts. The salsa was about 1 part each of onion, red pepper, cilantro, and apple, 2 cloves of garlic and 1/2 jalepeno, all finely chopped, 1 teaspoon each of sugar, lime juice and vinegar and 2 tablespoons of EVOO.
