Chops, Veggies & Bacon Roses

Started with a package a Wright Brand applewood thick cut bacon. Rolled em up and into the mini muffin tin.

Dusted with Head Country and sugar in the raw.
Plated.
Veggies cooked and covered to stay hot.
The chops brined for nearly 24 hrs. Brine was simple with some tarragon, bay leaves, rosemary and thyme. Rinsed and racked for additional 48 hrs.
Ready to dive into the egg.
Ready to rock.
CI pan with bacon grease.

@Jeremiah thanks man. The bacon gets done all the way through & with the rub and sugar it has flavor and caramelizes almost the entire thing. Next time I think I'll try either no sugar in the raw or wait till the last 20 minutes. Thanks y'all! Truth be told the bacon roses were delicious! However, presentation wise I thought they had a lot to be desired. Because I put the sugar in the raw early on the caramelizing kept the rose from developing/opening up.The chops were never intended to brine or rack as long as they did. just curious, what temp are you cooking your chops to? I think most people overcook pork chops and wind up with a dry, tough piece of leather. -
Nice cook! Question: the bacon fat would render in the muffin tin. I would think that the bacon would just cook in fat and never brown. So what did you do with all the fat?

@PNWFoodie brining certainly made a difference. I had never done so before but, took the advice from a friend. Good advise. 1 Gallon (4 liters) Water, 1 Cup (225 Grams) Kosher Salt & 1/2 Cup (125 grams) Sugar. I also added in some fresh tarragon, thyme, rosemary and bay leaves.
@theyolksonyou I took the chops to an IT of 138℉ which allowed for carryover.
@Cymbaline65 I had to drain grease several times. Which I stowed away in a coffee can to dispose of a later time. We just got a new pan which will allow me to modify for drainage. Short answer they didn't lie there in grease for long periods. @PNWFoodie Just to reiterate what NP said, make sure you use Kosher salt. If you use regular table salt it will be very salty. Don't ask me how I know, just trust me on that one :P You can use table salt but have to use less and I'm not sure exactly how much less.Great looking cook Husker.
