I gave the cupcake chicken thighs a dance. I deboned and de fatted the thighs and liberally rubbed the chicken prior to stuffing in the pan. Cooked 2 hours indirect at around 300. Flipped the thighs over and cooked about 1 1/2 hours before putting in a foil pan to glaze and finish. About 30 minutes. The came out great.
