Anyone ever do these? Figured I'd give them a shot. Late dinner as I had a late lunch. Pix to come. Advice is also welcome since I'm a newbie to rib tips.

Tips are just the trimmings cut away from spares when making St.Louis style ribs. They often cook more unevenly. Some parts are thin and mostly meat, others thick and mostly bone. 250 Dome, 4.5 hours - 5.5 hours should do it. Higher temps = faster. Watch for thinner parts getting over cooked, and snack on those as they are ready.

I'm thinking about telling my butcher just to cut my ribs to St Louis style.....nice and even. I don't need the tips and the ribs look nicer anyway. And sorry...local bbq joint in Jacksonville has rib tips in BBQ sauce as an appetizer. MOJO's BBQ...not bad for jacksonvilleSt. Johns County, Florida

Where have these been my whole life? =P~
Grilled them indirect on the Mini at around 325 deg f. Foiled them around 1.5 hours in the cook... Cooked them for about 35 min foiled... Then uncovered them, sauced them up with Rendezvous Memphis Original and gave them about another 30 or 45 min.
They're like little medallions of rib candy.
