Quail

Anyone have any good recipes for quail? i was looking to try something on the egg. Usually Mom is in charge of all quail frying duties.

    Here is some I did a while back that turned out pretty good. Hope that it helps.

    I am actually cooking quail for the Super Bowl. Two thoughts: (1) slice each side of the breast off, wrap around a pepper slice and wrap in bacon. Dust with rub or Italian dressing and cook direct. Don't over cook. (2) wrap whole breast in bacon and cook direct.

    The first method is how I am doing this weekend. They go fast.

    Here are a few we like. 
    On the BGE:

    In the oven:
    Quail. Eli White

    INGREDIENTS:
    4-6 Quail, whole or split
    4 Tbs. Butter
    3 Cups Whipping Cream
    4 Tbs. Flour
    4-6 Slices Bacon
    1 Cup Sour Cream
    1 Tbs. Lemon Juice
    Salt/Pepper

    Procedure:

    1. Preheat oven 350 F.
    Sprinkle Quail w/ salt/pepper
    Melt 4 Tbs. butter in frying pan. Saute quail until brown, careful not to burn in butter!
    Place Quail in oven proof casserole, cover, bake 30 minutes.

    2. Bring 3 Cups whipping cream to a slow boil.
    In skillet the quail were sauteed in, add 4 Tbs flour to the drippings remaining. 
    Gradually stir in hot whipping cream.
    Cook sauce until smooth and thick, apprx 20 minutes or so..
    Season with salt and pepper.

    3. Cook 4-6 slices of bacon until crispy. 1 piece for each quail. Bacon may be layed over quail in oven and cooked.

    4. Stir into sauce 1 cup. sour cream, 1 Tbs. lemon juice.

    5. Strain over Quail.

    6. Served, Garnished with bacon and fresh parsley.

    Servings: 1
    Yield: 4-6 Portions
