Had a just under 6 lb. flat in the freezer and decided I could use some more practice. Injected with a simple injection and fired the egg up to 250 indirect with some post oak I had.
Kids brought the grandkids by for a visit and arrived just in time for dinner. Strange how that works out. Well the brisket must have bee good, it got devoured. I have to admit it was mighty tasty. No one asked for BBQ sauce and none was needed.

Beautiful smoke ring, gorgeous hunk of meat in general. Great job sir!
:-bd Small flats benefit well from a foil wrap finish.
