One order is about 15-20 mussels

                              1/2 tbsp diced shallot

                              1/2 tbsp diced garlic (or more!)

                              1 tbsp diced tomatoes

                              1 1/2 cup white wine

                              2 tbsp whole softened butter

                              1/2 tbsp chopped parsley

                               salt, pepper

                              1/2 tsp chile flake

        We combine the mussels, garlic, shallots, tomatoes, salt, pepper in a saute pan and roast, ( you could just saute on top of stove), when they begin to open add wine and reduce by about half.

        Then remove mussels into serving dish and make sauce; add the butter, parsley and chile flake and constantly swirl the pan or use a whisk to emulsify the butter making a smooth sauce(this may take adding a little more wine to give you enough sauce and adjust with more butter if necessary. Taste for salt and pepper, and pour over mussels. Top with a thick slice of country bread that has been grilled or toasted and rubbed with raw garlic clove.
