Welcome. Spatch is a good cook. I would also throw in something you cook on your gasser like pork chops, hamburgers etc... Just to see the difference!

Spatchcock is the way to go.
Do a google search on "Naked Whiz Spatchcock" and you'll get an easy to follow play by play.
