For what it's worth, seasoned with basic salt and pepper brisket rub. Indirect 275 for 45 minutes, bumped to 375 for another 25 or so, flipped skin side down to the opening of the plate setter ( did not feel like removing ) let it flame up to crisp skin and bacon. Came out great, very rich, easy cookVisalia, Ca @lkapigian

that spatch looks over-cooked. wild game needs to be at not a degree over medium rare. Breast looks spot on!

To my knowledge, I've only had duck once and it had been cured. Interesting cook. There's a butcher nearby that sales whole duck. I may give it a shot.
