New owner-----1st post Steak and Lobster

Got an XL for Christmas and a custom made cedar cabinet built by my son. Thought I would give it a shot with a nice 16 oz filet a couple of lobster tails. Went with the dwell in the shell recipe I found in this forum and seared the filet at about 625 then shut it down to finish it if medium rare. Turned out pretty good.
Give me some suggestions on what to try next.....

I will get the hang of this. Also, I am doing this on an iPad and for some reason, none of the formatting options are available. Vanilla and iOS don't play well. Chrome is better than safari, but not by much. The latest iOS version will not delete thumbs in safari. I was just messin with ya.

The lobster turned out great. I cut all of the membrane off, drizzled some olive oil on them, added a little seasoned salt and put them belly side down at 625 for 5 minutes and then turned them over, poured some melted butter with a little garlic on the belly and left them for another 3 or 4 minutes while the grill was shut down. @GoinOnce, I also use an iPad and iPhone. I post pics directly from my iPad or iPhone. The pics below will show you how to insert a pic into the post. This makes it easier for people to see the pic without having to open up the thumbnail. If you're using Safari, the thumbnail cannot be deleted after inserting the pic into the post, but if you use chrome it can.

@GoinOnce, +1 on the workspace. I like the way your son set it up. Does the top open for storage? Just a suggestion, you might want to look into getting a table-nest or some kind of spacers to leave an air gap underneath the egg.Steven

Good eye stem, don't want the egg sitting on the wood. Recipe for disaster.

It is setting on a concrete paver. Does there need to be something else to give it a little more breathing room? No lift top for storage and this thing is built like a tank. Steel stud construction inside.

Starting off big, I like it!! Looks like you got a sweet setup, welcome to the addiction!!For what to try next: I like taking advantage of the eggs insulation and making pork or chicken super tender. Pork Tenderloin with Black Berry Sauce... pics is a great recipe.Definitely try Spatchcock chicken sometime soon. Pork shoulder should definitely be on the short list as well! Mixed reviews on the paver. Less than 50 bucks buys a lot of insurance with a table nest. Full disclosure, I'm sitting on a paver, but I bought a nest today based on some fire posts I read.. Btw. That is a tank! Just wouldn't want the wood to catch fire on the deck, connected to the house..... You'll be ok to cook until you decide what's best for you.

GoinOnce that cook looks awesome and the table is sweet! Nice to have that much prep/cook space right next to the grill. You'll definitely want some storage once you start buying accessories. I'm at that point now. I need to figure something out...
