Roasting 2 turkeys for Christmas tomorrow

Any tips? The plan is to put a drip pan on the platesetter (legs up) with some trinity (onion, bell pepper and celery) in it and roast 2 12 pounders upright on stands at about 350 degrees. I'm hoping to cook them for about 2.5 to 3 hours or so. Will use temp as a guide. I'm not sure if basting is needed in this situation or not, since the Egg acts as a convection oven, but any advice for upright roasting is much appreciated.
Also, any prep tips would be awesome. We usually try to put some butter under the skin, but that seems futile using this method since it would presumably drip out anyway.

Your plan sounds fine. I like to inject them with melted butter. This adds moisture and flavor at the same time and it will not all cook away. Butter has become my go to injection for poultry.

You can buy a cheap throw away one at Walmart or any grocery store for less than 5 bucks. Just thought I would mention it. Good luck with the grub and Merry Christmas my friend.
