...before it is pulled pork. My own recipe brown sugar and sea salt rub. Going on the smoke tomorrow morning, for family Christmas day meal.

Started before dawn. Decided to do four on the XL and two on the LG.
Going to be a long day, the XL with four has been stalled at 174 for several hours, and the LBGE with two butts has been stalled at, gasp, 82 for several hours. This after being on the smoke for over seven hours.

After 11.5 hours. The Spouse, who has never is never shy about constructive criticism declares it the best yet. The differences? Done at about an average of 230 for 11.5 hours, and done for the first time with my own recipe brown sugar rub. Let it rest a while in the cooler, pull it apart, and package for Christmas dinner.
