Compart Duroc Pork Butts

Just prepped 2 Duroc butts 7.4 and 7.9 lbs. Keeping it simple , no injection, Dizzy Pig Coarse Ground.
Plan to cook at 11:00 PM at 225 grid with Oak and Hickory. Will ramp up temp if needed in the morning with a pull time of 2:30 PM.

At 8:30 AM the internal temp is now 175.

I must be in a stall. Still at 175 and grid steady at 225. I do not need to pull them off until 2:30PM. Should I raise the temp just ride it out?

I had repositioned the probe more towards the center of the butt. Raised the grid temp to 250. Still in the stall at 173/174. How long can a butt stall? -
Raised temp to 275 and now the internal temp is going up.

191 now at 12:50. I lowered the temp to 250 to slow it down a bit until we are ready to leave. Plan on FTC between 2:00-2:30.

It all worked out good. Great flavor profile and the meat was very tender.
